Description

A comforting bowl of warm tomato soup topped with savory cheddar bay dumplings, perfect for cozy evenings.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cans (15 ounces) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • 1/4 cup milk
  • 2 tablespoons butter, melted


Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until softened.
  2. Add the diced tomatoes, vegetable broth, basil, sugar, salt, and pepper. Bring to a simmer and cook for 20 minutes.
  3. In a bowl, mix together the flour, baking powder, garlic powder, cheese, milk, and melted butter to form the dumpling batter.
  4. Drop spoonfuls of the dumpling batter into the simmering soup. Cover and cook for an additional 15 minutes.
  5. Serve hot and enjoy!
