- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cans (15 ounces) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried basil
- 1 teaspoon sugar
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon garlic powder
- 1/4 cup milk
- 2 tablespoons butter, melted
Instructions
- In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until softened.
- Add the diced tomatoes, vegetable broth, basil, sugar, salt, and pepper. Bring to a simmer and cook for 20 minutes.
- In a bowl, mix together the flour, baking powder, garlic powder, cheese, milk, and melted butter to form the dumpling batter.
- Drop spoonfuls of the dumpling batter into the simmering soup. Cover and cook for an additional 15 minutes.
- Serve hot and enjoy!
