Description

A refreshing and vibrant parsley-based salad, tabbouleh is a popular Middle Eastern dish.


Ingredients

  • 1 cup bulgur wheat
  • 2 cups boiling water
  • 2 cups finely chopped parsley
  • 1/2 cup chopped mint leaves
  • 1/2 cup diced tomatoes
  • 1/4 cup diced cucumber
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • Salt to taste


Instructions

  1. Place the bulgur in a bowl and pour the boiling water over it. Let it sit for about 20 minutes, or until it has absorbed the water and is tender.
  2. Fluff the bulgur with a fork and let it cool to room temperature.
  3. Add the chopped parsley, mint, tomatoes, and cucumber to the bulgur.
  4. In a separate bowl, whisk together the olive oil, lemon juice, and salt.
  5. Pour the dressing over the salad and mix well to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.
