Ingredients

- 2 cups cucumber, thinly sliced
- 2 cups carrot, julienned
- 2 tablespoons sesame oil
- 1 tablespoon soy sauce
- 1 teaspoon rice vinegar
- 1 teaspoon chili paste
- 1 tablespoon sesame seeds
- 1 green onion, chopped
Instructions
- In a large bowl, combine the sliced cucumbers and julienned carrots.
- In a separate small bowl, whisk together the sesame oil, soy sauce, rice vinegar, and chili paste.
- Pour the dressing over the cucumber and carrot mixture and toss to coat.
- Sprinkle sesame seeds and chopped green onion on top and mix gently.
- Let the salad sit for 10 minutes before serving to allow the flavors to meld.
Notes
- This salad is best served fresh but can be stored in the refrigerator for up to 2 days.
