Description

A hearty and flavorful Spanish beef stew made with tender beef, vegetables, and rich spices.


Ingredients

  • 2 pounds beef chuck, cut into cubes
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 red bell pepper, chopped
  • 1 tablespoon smoked paprika
  • 1 teaspoon cumin
  • 1 bay leaf
  • 4 cups beef broth
  • Salt and pepper to taste
  • 1 cup peas


Instructions

  1. In a large pot, heat olive oil over medium heat. Add the beef and brown on all sides.
  2. Add the onion and garlic, cooking until softened.
  3. Stir in the carrots, potatoes, bell pepper, paprika, cumin, and bay leaf.
  4. Pour in the beef broth and bring to a boil.
  5. Reduce heat, cover, and simmer for 1.5 to 2 hours until the beef is tender.
  6. Add peas in the last 10 minutes of cooking.
  7. Season with salt and pepper to taste before serving.

Notes

  • For added flavor, marinate the beef in spices overnight.
  • This stew can be made a day ahead to enhance the flavors.
