- 2 pounds beef chuck, cut into cubes
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 red bell pepper, chopped
- 1 tablespoon smoked paprika
- 1 teaspoon cumin
- 1 bay leaf
- 4 cups beef broth
- Salt and pepper to taste
- 1 cup peas
Instructions
- In a large pot, heat olive oil over medium heat. Add the beef and brown on all sides.
- Add the onion and garlic, cooking until softened.
- Stir in the carrots, potatoes, bell pepper, paprika, cumin, and bay leaf.
- Pour in the beef broth and bring to a boil.
- Reduce heat, cover, and simmer for 1.5 to 2 hours until the beef is tender.
- Add peas in the last 10 minutes of cooking.
- Season with salt and pepper to taste before serving.
Notes
- For added flavor, marinate the beef in spices overnight.
- This stew can be made a day ahead to enhance the flavors.
- Serve with crusty bread for a complete meal.
