Description
Delicious Greek spinach pie made with flaky phyllo pastry and a savory filling.
Ingredients

- 1 pound fresh spinach
- 1 cup ricotta cheese
- 1 cup feta cheese, crumbled
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dill
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup olive oil
- 16 sheets phyllo pastry
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat and sauté the onion and garlic until soft.
- Add spinach and cook until wilted, then remove from heat and let cool.
- In a bowl, mix together the ricotta, feta, dill, salt, and pepper.
- Combine the cooled spinach mix with the cheese mixture.
- Lay one sheet of phyllo dough in a greased baking dish, brush with olive oil, and layer another sheet on top.
- Repeat until you have about 4 layers.
- Spread the spinach and cheese filling over the phyllo layers.
- Top with additional phyllo sheets, brushing each layer with olive oil.
- Fold the edges of the phyllo dough over the filling to seal.
- Score the top of the pastry with a knife to create serving pieces.
- Bake for 30-40 minutes or until golden brown.
Notes
- For a richer flavor, you can add an egg to the cheese mixture.
- Serve with a side of yogurt for dipping.
