Delicious and creamy mashed potatoes made with red skin potatoes for a richer flavor.

- 2 pounds red skin potatoes
- 1/2 cup heavy cream
- 1/4 cup unsalted butter
- 1/2 teaspoon garlic powder
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped chives
Instructions
- Wash and quarter the red skin potatoes.
- In a large pot, cover potatoes with water and add salt. Bring to a boil.
- Cook for 15-20 minutes or until potatoes are tender.
- Drain the potatoes and return to the pot.
- Add heavy cream, butter, garlic powder, salt, and black pepper.
- Mash the potatoes until smooth and creamy.
- Stir in chopped chives before serving.
Notes
- Adjust the amount of cream and butter to achieve desired creaminess.
- For a chunky texture, leave some potato skins on when mashing.
