- 1 cup fresh raspberries
- 2 cups milk
- 1/2 cup sugar
- 1/4 cup cornstarch
- 3 egg yolks
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 package digestive biscuits
- 1/2 cup unsalted butter, melted
Instructions
- Preheat the oven to 350°F (175°C).
- Blend the digestives into crumbs and mix with melted butter.
- Press the mixture into a baking dish to form the base.
- In a saucepan, combine milk, sugar, cornstarch, and salt. Cook over medium heat until thickened.
- Whisk in egg yolks and vanilla extract, then remove from heat.
- Pour custard over the biscuit base and spread raspberries on top.
- Bake for 30 minutes, then cool in the refrigerator.
- Cut into slices and serve chilled.
