Description

This refreshing treat combines the sweet tartness of raspberries with rich vanilla custard, all nestled in a delicious base.


Ingredients

  • 1 cup fresh raspberries
  • 2 cups milk
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 3 egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 package digestive biscuits
  • 1/2 cup unsalted butter, melted


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Blend the digestives into crumbs and mix with melted butter.
  3. Press the mixture into a baking dish to form the base.
  4. In a saucepan, combine milk, sugar, cornstarch, and salt. Cook over medium heat until thickened.
  5. Whisk in egg yolks and vanilla extract, then remove from heat.
  6. Pour custard over the biscuit base and spread raspberries on top.
  7. Bake for 30 minutes, then cool in the refrigerator.
  8. Cut into slices and serve chilled.
