- 1 pound chorizo sausage
- 2 cups shredded Monterey Jack cheese
- 1 cup shredded Cheddar cheese
- 1/2 cup diced onion
- 1/4 cup chopped cilantro
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
Instructions
- In a skillet over medium heat, cook the chorizo until browned and cooked through.
- Add the diced onion and cook until translucent.
- Reduce heat to low and stir in the Monterey Jack and Cheddar cheeses until melted.
- Mix in garlic powder, cumin, smoked paprika, and cayenne pepper.
- Transfer to a serving dish and sprinkle with chopped cilantro.
- Serve warm with tortilla chips or bread.
Notes
- For a spicier kick, add more cayenne pepper or diced jalapeños.
- This dip can be made ahead of time and reheated before serving.
