Description
Delicious cupcakes inspired by the classic peanut butter and jelly sandwich.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup milk
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup jelly or jam of choice
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake tin with paper liners.
- In a mixing bowl, combine the flour, baking powder, baking soda, and salt.
- In another bowl, mix the peanut butter, granulated sugar, brown sugar, milk, oil, and eggs until smooth.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Fill each cupcake liner about halfway with batter.
- Place a teaspoon of jelly or jam in the center of each cupcake.
- Top off with more batter until the liners are about 3/4 full.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Allow to cool before serving.
Notes
- For a chocolate variation, add cocoa powder to the batter.
- Store in an airtight container for up to 3 days.
