Description

Delicious cupcakes inspired by the classic peanut butter and jelly sandwich.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup jelly or jam of choice


Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a mixing bowl, combine the flour, baking powder, baking soda, and salt.
  3. In another bowl, mix the peanut butter, granulated sugar, brown sugar, milk, oil, and eggs until smooth.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Fill each cupcake liner about halfway with batter.
  6. Place a teaspoon of jelly or jam in the center of each cupcake.
  7. Top off with more batter until the liners are about 3/4 full.
  8. Bake for 18-20 minutes, or until a toothpick comes out clean.
  9. Allow to cool before serving.

Notes

  • For a chocolate variation, add cocoa powder to the batter.
  • Store in an airtight container for up to 3 days.
