Description

Delicious and wholesome oatmeal chocolate chip muffins perfect for breakfast or a snack!


Ingredients

  • 1 cup rolled oats
  • 1 cup milk
  • 1/2 cup brown sugar
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, combine rolled oats and milk, and let it sit for about 10 minutes.
  3. In another bowl, whisk together brown sugar, vegetable oil, egg, and vanilla extract.
  4. Add the oat mixture to the wet ingredients and mix until combined.
  5. In a separate bowl, combine flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture and mix until just combined. Fold in chocolate chips.
  7. Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  9. Let cool for a few minutes in the tin before transferring to a wire rack to cool completely.

Notes

  • For a healthier option, substitute half of the all-purpose flour with whole wheat flour.
  • Store muffins in an airtight container at room temperature for up to 3 days or freeze for longer storage.
