Description

This moist spiced carrot cake is topped with a rich and creamy cream cheese frosting, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 3 cups shredded carrots
  • 1 cup crushed pineapple, drained
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup walnuts, chopped (optional)
  • 1 cup cream cheese, softened
  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix the eggs, oil, and vanilla extract until well combined.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Fold in the shredded carrots, crushed pineapple, and walnuts (if using).
  6. Divide the batter evenly between the prepared cake pans.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then remove from pans and allow to cool completely on a wire rack.
  9. For the frosting, beat the cream cheese and butter in a bowl until smooth.
  10. Add the powdered sugar and vanilla extract and mix until well combined.
  11. Once the cakes are completely cool, spread the frosting between the layers and on top of the cake.
  12. Serve and enjoy!

Notes

  • Make sure to let the cakes cool completely before frosting to prevent the frosting from melting.
  • This cake can be stored in the fridge for up to a week.
