Description

Delicious mini blueberry fritters that are quick and easy to make, perfect for a sweet snack or dessert!


Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup milk
  • 1 large egg
  • 1 cup fresh blueberries
  • 1 teaspoon vanilla extract
  • Oil for frying


Instructions

  1. In a large bowl, mix together flour, sugar, baking powder, salt, and cinnamon.
  2. In another bowl, whisk together the milk, egg, and vanilla extract.
  3. Combine the wet ingredients with the dry ingredients until just mixed.
  4. Gently fold in the blueberries.
  5. Heat oil in a deep frying pan over medium heat.
  6. Drop spoonfuls of the batter into the hot oil and fry until golden brown on both sides.
  7. Remove from oil and drain on paper towels.
  8. Serve warm, dusted with powdered sugar if desired.
