Ingredients

  • 2 tablespoons olive oil
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 2 cups chopped carrots
  • 2 cups chopped celery
  • 1 zucchini, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 cup green beans, chopped
  • 1 cup kidney beans, drained and rinsed
  • 1 cup cooked pasta (like ditalini)
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the onion and garlic, sauté until soft.
  3. Add carrots and celery, cook for about 5 minutes.
  4. Add zucchini and cook for an additional 3 minutes.
  5. Stir in the diced tomatoes and vegetable broth, bringing to a boil.
  6. Add the green beans, kidney beans, basil, oregano, salt, and pepper.
  7. Reduce heat and let simmer for 20 minutes.
  8. Add cooked pasta and heat through.
  9. Serve hot.
