Description

Delicious and spicy Mexican Pulled Chicken, perfect for tacos, burritos, or served over rice.


Ingredients

  • 2 pounds chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chicken broth
  • 1 cup salsa
  • 1 tablespoon lime juice


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season chicken breasts with chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  3. Add the seasoned chicken to the skillet and cook until browned, about 4-5 minutes per side.
  4. Add chicken broth and salsa to the skillet. Bring to a boil.
  5. Reduce heat, cover, and simmer for 20-25 minutes, until chicken is cooked through.
  6. Once cooked, shred the chicken with two forks and mix it with the sauce.
  7. Stir in lime juice before serving.

Notes

  • Use leftovers in tacos or on salads.
  • If you like it spicier, add more chili powder or jalapeños.
