- 2 pounds chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup chicken broth
- 1 cup salsa
- 1 tablespoon lime juice
Instructions
- Heat olive oil in a skillet over medium heat.
- Season chicken breasts with chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and black pepper.
- Add the seasoned chicken to the skillet and cook until browned, about 4-5 minutes per side.
- Add chicken broth and salsa to the skillet. Bring to a boil.
- Reduce heat, cover, and simmer for 20-25 minutes, until chicken is cooked through.
- Once cooked, shred the chicken with two forks and mix it with the sauce.
- Stir in lime juice before serving.
Notes
- Use leftovers in tacos or on salads.
- If you like it spicier, add more chili powder or jalapeños.
