A delicious and hearty Loaded Potato Taco Bowl, perfect for dinner.

- 4 large potatoes
- 1 pound ground beef
- 1 package taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 cup salsa
- 1/2 cup green onions, chopped
Instructions
- Preheat oven to 400°F (200°C).
- Wash and poke holes in potatoes, then bake for about 1 hour until tender.
- In a skillet, brown the ground beef and drain excess fat.
- Add taco seasoning to the beef and follow package instructions.
- Once potatoes are baked, remove from oven and let cool slightly.
- Cut each potato in half and scoop out some flesh.
- Fill with seasoned beef, cheese, sour cream, salsa, and top with green onions.
- Return to oven for 10 minutes or until cheese is melted.
Notes
- For a vegetarian option, replace ground beef with black beans.
- Feel free to customize toppings based on preference.
