Description

A delicious and creamy linguine dish with spinach and sun-dried tomatoes, perfect for a quick weeknight meal.


Ingredients

  • 8 ounces linguine pasta
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste


Instructions

  1. Cook the linguine according to package instructions until al dente.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add spinach and sun-dried tomatoes; cook until spinach is wilted.
  4. Stir in heavy cream and bring to a simmer.
  5. Add cooked linguine to the skillet and toss to combine.
  6. Stir in Parmesan cheese until melted. Season with salt and pepper to taste.
  7. Serve immediately with additional Parmesan, if desired.
