Description

Delicious and nutritious blueberry muffins that are perfect for breakfast or a snack.


Ingredients

  • 1 cup whole wheat flour
  • 1 cup rolled oats
  • 1/2 cup honey or maple syrup
  • 1/2 cup unsweetened applesauce
  • 1/2 cup milk (or non-dairy substitute)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, combine the whole wheat flour, rolled oats, baking powder, baking soda, and salt.
  3. In another bowl, mix the honey, applesauce, milk, and vanilla extract.
  4. Combine the wet and dry ingredients, stirring until just mixed. Gently fold in the blueberries.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Allow to cool before serving.

Notes

  • These muffins can be stored in an airtight container for up to 3 days.
  • For a healthier option, you can substitute some of the flour with almond flour.
