Ingredients

- 1 cup whole wheat flour
- 1 cup rolled oats
- 1/2 cup honey or maple syrup
- 1/2 cup unsweetened applesauce
- 1/2 cup milk (or non-dairy substitute)
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a mixing bowl, combine the whole wheat flour, rolled oats, baking powder, baking soda, and salt.
- In another bowl, mix the honey, applesauce, milk, and vanilla extract.
- Combine the wet and dry ingredients, stirring until just mixed. Gently fold in the blueberries.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Allow to cool before serving.
Notes
- These muffins can be stored in an airtight container for up to 3 days.
- For a healthier option, you can substitute some of the flour with almond flour.
