Healthy and flavorful ground turkey power bowls topped with a creamy peanut sauce, perfect for meal prep.


Ingredients

  • 1 pound ground turkey
  • 1 cup brown rice
  • 2 cups broccoli florets
  • 1 bell pepper, sliced
  • 1 carrot, shredded
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1/2 cup peanut butter
  • 1/4 cup water
  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • 1 garlic clove, minced
  • 1 inch ginger, grated


Instructions

  1. Cook the brown rice according to package instructions.
  2. In a skillet, heat sesame oil over medium heat. Add ground turkey and cook until browned.
  3. Add broccoli, bell pepper, and carrot to the skillet and sauté until tender.
  4. In a bowl, whisk together peanut butter, water, honey, lime juice, garlic, and ginger until smooth.
  5. Serve the turkey mixture over rice and drizzle with peanut sauce.
