Ingredients

- 2 cups all-purpose flour
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1 teaspoon baking soda
- ½ teaspoon salt
- ¾ cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- ½ cup molasses
- ½ cup powdered sugar for rolling
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix together flour, ginger, cinnamon, baking soda, and salt.
- In another bowl, cream the butter and granulated sugar together until fluffy.
- Add the egg and molasses to the butter mixture and beat until well combined.
- Gradually add the flour mixture to the wet ingredients until combined.
- Shape dough into balls and roll in powdered sugar.
- Place on a baking sheet and bake for 8-10 minutes.
- Let cool before serving.
Notes
- For a spicier cookie, add extra ginger.
- Store in an airtight container to keep cookies soft.
