Description

Deliciously spiced with ginger and molasses, these gingersnap cookies are perfect for the holidays or any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • ½ cup molasses
  • ½ cup powdered sugar for rolling


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix together flour, ginger, cinnamon, baking soda, and salt.
  3. In another bowl, cream the butter and granulated sugar together until fluffy.
  4. Add the egg and molasses to the butter mixture and beat until well combined.
  5. Gradually add the flour mixture to the wet ingredients until combined.
  6. Shape dough into balls and roll in powdered sugar.
  7. Place on a baking sheet and bake for 8-10 minutes.
  8. Let cool before serving.

Notes

  • For a spicier cookie, add extra ginger.
  • Store in an airtight container to keep cookies soft.
