A simple and delicious Thai-inspired chicken dish made in a slow cooker with a rich peanut sauce.

- 2 pounds boneless, skinless chicken thighs
- 1 cup creamy peanut butter
- 1/2 cup soy sauce
- 1/2 cup chicken broth
- 1/4 cup brown sugar
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1 tablespoon lime juice
- 1/2 teaspoon red pepper flakes
- 1/4 cup chopped peanuts for garnish
Instructions
- In a bowl, mix peanut butter, soy sauce, chicken broth, brown sugar, garlic, ginger, lime juice, and red pepper flakes.
- Place chicken thighs in the crockpot.
- Pour the peanut sauce over the chicken thighs.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, shred the chicken and mix with sauce.
- Serve over rice and garnish with chopped peanuts.
Notes
- For extra flavor, add chopped cilantro on top before serving.
- This recipe can be doubled for larger gatherings.
- Feel free to adjust the spiciness by varying the amount of red pepper flakes.
