Description

A simple and delicious Thai-inspired chicken dish made in a slow cooker with a rich peanut sauce.


Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1 cup creamy peanut butter
  • 1/2 cup soy sauce
  • 1/2 cup chicken broth
  • 1/4 cup brown sugar
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 tablespoon lime juice
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup chopped peanuts for garnish


Instructions

  1. In a bowl, mix peanut butter, soy sauce, chicken broth, brown sugar, garlic, ginger, lime juice, and red pepper flakes.
  2. Place chicken thighs in the crockpot.
  3. Pour the peanut sauce over the chicken thighs.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Once cooked, shred the chicken and mix with sauce.
  6. Serve over rice and garnish with chopped peanuts.

Notes

  • For extra flavor, add chopped cilantro on top before serving.
  • This recipe can be doubled for larger gatherings.
  • Feel free to adjust the spiciness by varying the amount of red pepper flakes.
