- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1/2 teaspoon cayenne pepper
- 1 can (14 oz) diced tomatoes
- 2 cans (15 oz) chickpeas, drained and rinsed
- 1 can (14 oz) coconut milk
- 1 cup spinach, roughly chopped
- Salt to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and cook until translucent, about 5 minutes.
- Stir in the garlic and ginger and cook for another minute.
- Add the spices (cumin, coriander, turmeric, cayenne) and cook for 1 minute until fragrant.
- Pour in the diced tomatoes, chickpeas, and coconut milk. Bring to a simmer.
- Reduce heat and let it simmer for 10-15 minutes.
- Stir in the chopped spinach and season with salt to taste.
- Serve hot, garnished with fresh cilantro.
Notes
- For a spicier dish, increase cayenne pepper.
