This easy chicken stir-fry is quick, healthy, and packed with flavor!
Ingredients

- 1 pound boneless, skinless chicken breasts, sliced
- 2 cups mixed vegetables (bell peppers, broccoli, carrots)
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- 1 tablespoon cornstarch (optional)
Instructions
- Heat the vegetable oil in a large pan over medium-high heat.
- Add the garlic and ginger, sauté for about 30 seconds.
- Add the chicken slices and cook until browned.
- Stir in the mixed vegetables and cook until tender-crisp.
- Mix soy sauce and cornstarch (if using) in a bowl and add to the pan.
- Stir everything together until heated through and sauce thickens slightly.
- Serve hot over rice or noodles.
Notes
- For extra flavor, marinate chicken in soy sauce for 15 minutes before cooking.
- Feel free to substitute vegetables based on what you have.
