Description

This delicious Crock Pot Queso Chicken and Rice is a creamy, cheesy dish packed with flavor and easy to prepare.


Ingredients

Scale
  • 2 pounds chicken breasts
  • 1 cup salsa
  • 1 cup queso dip
  • 1 cup chicken broth
  • 1 cup long-grain white rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup shredded cheddar cheese


Instructions

  1. Place the chicken in the crockpot.
  2. In a bowl, combine salsa, queso dip, chicken broth, rice, black beans, corn, garlic powder, onion powder, cumin, and chili powder.
  3. Pour the mixture over the chicken in the crockpot.
  4. Cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through.
  5. Shred the chicken and stir in the shredded cheese until melted.
  6. Serve warm.

Notes

  • Can be served with tortilla chips or over a bed of lettuce.
  • Add more vegetables as desired.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
