A comforting and hearty chicken corn soup that’s perfect for any occasion.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup corn kernels, fresh or frozen
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup milk
- 2 tbsp butter
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1 tbsp fresh parsley, chopped
Instructions
- In a large pot, melt the butter over medium heat. Add the onions and garlic, and sauté until translucent.
- Add the chicken broth and bring to a boil.
- Stir in the shredded chicken and corn. Reduce heat and let simmer for 10 minutes.
- Add the milk, salt, pepper, and paprika. Stir to combine and heat through.
- Remove from heat and garnish with fresh parsley before serving.
Notes
- For a thicker consistency, you may blend some of the soup and stir it back in.
- This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
