Chicken Corn Soup

Description

A comforting and hearty chicken corn soup that’s perfect for any occasion.


Ingredients

Scale
  • 2 cups cooked chicken, shredded
  • 1 cup corn kernels, fresh or frozen
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup milk
  • 2 tbsp butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1 tbsp fresh parsley, chopped


Instructions

  1. In a large pot, melt the butter over medium heat. Add the onions and garlic, and sauté until translucent.
  2. Add the chicken broth and bring to a boil.
  3. Stir in the shredded chicken and corn. Reduce heat and let simmer for 10 minutes.
  4. Add the milk, salt, pepper, and paprika. Stir to combine and heat through.
  5. Remove from heat and garnish with fresh parsley before serving.

Notes

  • For a thicker consistency, you may blend some of the soup and stir it back in.
  • This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
