- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 4 large eggs, separated
- 3/4 cup granulated sugar
- 1/4 cup champagne
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- Fresh strawberries for garnish
Instructions
- Preheat the oven to 350°F (175°C). Grease and line a 15×10 inch jelly roll pan with parchment paper.
- In a bowl, combine flour, baking powder, and salt. Set aside.
- In another bowl, beat egg yolks and sugar until thick and pale. Add champagne and vanilla extract.
- Fold in the flour mixture gently.
- In a separate bowl, whip egg whites until stiff peaks form. Fold into the batter.
- Spread the batter evenly in the prepared pan.
- Bake for 12-15 minutes or until the cake springs back when touched.
- Dust a clean kitchen towel with powdered sugar and invert the cake onto the towel. Roll up the cake with the towel and let cool.
- For the filling, beat heavy cream with powdered sugar and vanilla until stiff peaks form.
- Unroll the cake, spread the whipped cream over it, and re-roll without the towel.
- Chill for 2 hours before serving. Garnish with fresh strawberries.

- Make sure to let the cake cool completely before unrolling.
- For a richer flavor, use a good quality champagne.
- This dessert can be made a day in advance and chilled overnight.
