Description

This Champagne Cake Roll is a delightful dessert perfect for celebrations, combining the lightness of a sponge cake with the festive flavor of champagne.


Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 large eggs, separated
  • 3/4 cup granulated sugar
  • 1/4 cup champagne
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Fresh strawberries for garnish


Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a 15×10 inch jelly roll pan with parchment paper.
  2. In a bowl, combine flour, baking powder, and salt. Set aside.
  3. In another bowl, beat egg yolks and sugar until thick and pale. Add champagne and vanilla extract.
  4. Fold in the flour mixture gently.
  5. In a separate bowl, whip egg whites until stiff peaks form. Fold into the batter.
  6. Spread the batter evenly in the prepared pan.
  7. Bake for 12-15 minutes or until the cake springs back when touched.
  8. Dust a clean kitchen towel with powdered sugar and invert the cake onto the towel. Roll up the cake with the towel and let cool.
  9. For the filling, beat heavy cream with powdered sugar and vanilla until stiff peaks form.
  10. Unroll the cake, spread the whipped cream over it, and re-roll without the towel.
  11. Chill for 2 hours before serving. Garnish with fresh strawberries.

  • Make sure to let the cake cool completely before unrolling.
  • For a richer flavor, use a good quality champagne.
  • This dessert can be made a day in advance and chilled overnight.
