Description

This hearty Black Bean and Beef Chili is a perfect meal for any occasion, easy to make on the stovetop or in a slow cooker.


Ingredients

  • 1 pound ground beef
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (14 ounces) diced tomatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup beef broth


Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium heat. Drain excess fat.
  2. Add the onion and garlic; sauté until the onion is translucent.
  3. Stir in chili powder, cumin, paprika, salt, and black pepper; cook for 1 minute.
  4. Add the black beans, diced tomatoes, and beef broth; bring to a boil.
  5. Reduce the heat and simmer for at least 30 minutes, or transfer to a slow cooker and cook on low for 6-8 hours.
  6. Serve hot with your choice of toppings.

Notes

  • This chili can be made ahead of time and freezes well.
  • For a spicier chili, add diced jalapeños or hot sauce.
