This hearty Black Bean and Beef Chili is a perfect meal for any occasion, easy to make on the stovetop or in a slow cooker.

- 1 pound ground beef
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (14 ounces) diced tomatoes
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup beef broth
Instructions
- In a large pot or Dutch oven, brown the ground beef over medium heat. Drain excess fat.
- Add the onion and garlic; sauté until the onion is translucent.
- Stir in chili powder, cumin, paprika, salt, and black pepper; cook for 1 minute.
- Add the black beans, diced tomatoes, and beef broth; bring to a boil.
- Reduce the heat and simmer for at least 30 minutes, or transfer to a slow cooker and cook on low for 6-8 hours.
- Serve hot with your choice of toppings.
Notes
- This chili can be made ahead of time and freezes well.
- For a spicier chili, add diced jalapeños or hot sauce.
