Description
A quick and delicious one-pan meal featuring ground turkey, sweet potatoes, and taco seasoning.
Ingredients

- 1 pound ground turkey
- 1 medium sweet potato, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon taco seasoning
- 1 cup corn (frozen or canned)
- 1 cup black beans, rinsed and drained
- 1 small red bell pepper, diced
- 1/2 cup chicken broth
- 1/4 cup cilantro, chopped
- Salt and pepper to taste
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add onion and garlic, sauté until translucent.
- Stir in ground turkey and cook until browned.
- Add diced sweet potato and cook for 5 minutes.
- Stir in taco seasoning, broth, corn, black beans, and bell pepper.
- Cover and simmer for 15 minutes, stirring occasionally.
- Once sweet potatoes are tender, stir in cilantro and season with salt and pepper.
Notes
- This dish can easily be made in advance and reheated.
- Feel free to add your favorite toppings, such as avocado or cheese.
